Apple Salad

1 cup granulated sugar
1 cup water
2 tablespoons all-purpose flour
1 tablespoon vinegar
1 tablespoon butter
2 eggs
4 to 6 cups sliced apples

Mix all ingredients except apples in saucepan, cook until thick. Pour over apples. Serve warm or cold.

      Amish Dressing

      Source: Cooking from Quilt Country - Marcia Adams

      2 pounds crusty white bread, cut into 1/2-inch cubes
      2 pounds chicken thighs, poached
      1/2 cup fresh parsley, minced
      3/4 cup onion, chopped
      1 cup celery, chopped
      1 cup carrot, grated
      1 1/4 cups potatoes, diced
      3 teaspoons sage
      3 teaspoons celery seed
      1 teaspoon thyme
      1/2 teaspoon fresh ground black pepper
      1 1/2 teaspoons turmeric
      5 eggs
      12 ounces evaporated milk
      2 1/2 cups chicken stock

      Boil potatoes until just barely tender. Drain and set aside.

      Poach chicken and set aside to cool. When cooled, skin, debone and chop meat finely. Discard skin.

      In a large bowl add bread, chicken, parsley, onion, celery, carrot, potatoes, sage, celery seed, thyme, pepper and turmeric. Toss well to combine.

      In a medium bowl beat eggs, evaporated milk and chicken stock together. Pour over bread mixture and mix well. Mixture will be quite moist. Allow to stand for 1 hour at room temperature.

      Preheat oven to 325 degrees F, and lightly grease a 3-quart casserole. Transfer dressing to prepared casserole dish and bake for 1 1 1/2 hours, or until center puffs up and top is golden brown.

      Amish Friendship Fruit Cake

      1 (18.25 ounce) box yellow cake mix with
          pudding in the mix
      1/3 cup vegetable oil
      4 eggs
      1 3/4 cup Amish Friendship Fruit Starter
      1 cup chopped pecans
      Confectioners sugar (if desired)
      Cream cheese frosting (if desired)

      Line the bottom of a springform angel food cake pan with wax paper; grease well, then flour.

      In large mixing bowl of electric mixer, combine dry cake mix and oil. Beat in eggs, one at a time, beating well. Add fruit; mix well. Fold in nuts. Pour batter into prepared pan. Bake in a preheated 350 degree F oven for 40 minutes, then reduce heat to 300 degrees F and bake 35 to 40 minutes more, or until cake tests done.

      Shake pan to loosen cake from sides and let sit 10 minutes.

      Lift the center of the pan out and turn cake onto cake plate. Turn cake right-side up before serving. Sprinkle with confectioners sugar if desired, or top with cream cheese frosting. This cake tastes better when cold.

      NOTE: You will use from 1 1/2 to 2 cups drained fruit per cake.

          chicken noodle soup

          Chicken Noodle Soup

          3 pounds chicken
          2 quarts water
          2 teaspoons salt
          1 1/2 cups chicken stock
          2 cups celery, chopped
          2 cups carrots, chopped
          1 tart apple, chopped
          1 cup onions, chopped
          Dash of pepper
          4 cups egg noodles

          Place chicken in kettle with 2 quarts water. Cover until tender (about 2 1/2 hours).

          Remove chicken from kettle and strain broth. Debone chicken and return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, and pepper and cook until vegetables are tender. Add noodles and cook for 8 to 10 minutes.

              Angel Food Cookies

              1 cup Crisco
              1/2 cup granulated sugar
              1/4 teaspoon salt
              1 teaspoon baking soda
              1 teaspoon vanilla extract
              1/2 cup brown sugar
              1 egg
              2 cups all-purpose flour
              1 teaspoon cream of tartar
              1 cup coconut

              Mix Crisco and sugar until creamy; add egg.

              Sift all dry ingredients together. Add to Crisco mixture. Roll dough into small balls and dip into water, then into brown sugar. Put on cookie sheet. Bake at 375 degrees F for 15 minutes.

              Makes 4 dozen.

                      Amish Vegetables

                      2 cups vegetables, cooked just until firm (your choice)
                      2 slices bacon, minced
                      1/4 cup cooling liquid from vegetables
                      1/2 cup granulated sugar
                      1/4 cup vinegar
                      1/4 teaspoon salt
                      2 tablespoons onion
                      1 tablespoon celery
                      1 tablespoon vegetable oil
                      1 teaspoon cornstarch, dissolved

                      Fry bacon. Add sugar, vinegar and liquid. Add vegetables and simmer uncovered about 15 minutes. When cooked, add cornstarch.

                      Banana Cake

                      1/2 cup butter
                      2 cups all-purpose flour, sifted
                      1 cup sour milk
                      1 teaspoon vanilla extract
                      1 1/2 cups granulated sugar
                      1 teaspoon baking powder
                      1 teaspoon baking soda
                      2 bananas, creamed
                      2 eggs, beaten

                      Cream butter and sugar together. Add well beaten eggs. To this mixture, add the sour milk alternately with the sifted flour, baking powder and the baking soda. Add creamed bananas and vanilla extract. Beat with an egg beater. Grease and flour a pan and bake cake at 350 degrees F for about 40 minutes. Cool before removing from pan.

                                Chicken Dressing

                                1/2 cup finely chopped onion
                                1/2 cup finely chopped celery
                                1/2 cup finely chopped carrots
                                1 cup diced potatoes
                                1/2 cup margarine
                                1 large loaf dried bread, cut into cubes
                                1 teaspoon salt
                                1/8 teaspoon pepper
                                1 cup milk
                                1 cup chicken broth
                                2 cups finely chopped chicken, cooked

                                Saut? vegetables in margarine until vegetables are tender. Add remaining ingredients to vegetable mixture and mix thoroughly, adding more broth if necessary. Bake 35-45 minutes at 350 degrees F.
